Recipe for Thai Turkey Burgers - Spicy!

Thai Turkey Burgers with Coconut-Mint Mayo
Makes 4 burgers

Ingredients:
1/2 cup mayo
1/3 cup flaked coconut
1/2 tablespoon chopped fresh mint leaves

1 lb. ground turkey (85% lean)
1 1/4 cups panko bread crumbs
1/4 cup peanut sauce
1 tablespoon red curry paste
1 tablespoon chopped green onion
1 tablespoon chopped fresh parsley
1 teasoon soy sauce
3 teaspoons minced garlic
1 teaspoon lemon juice
1 teaspoon lime juice
1 tablespoon hot sauce

4 hamburger buns

Directions:

Dressing

Mix together mayonnaise, coconut, and mint. Cover, and refrigerate for an hour.

Burgers:

In a large bowl, mix together ground turkey, panko crumbs, Thai peanut sauce, curry paste, green onion, parsley, soy sauce, garlic, lemon juice, lime juice, and hot pepper sauce. Be careful not to over-mix. Divide into 4 equal size balls. Flatten into patties about 1/2 inch thick.

Grill or fry burgers at medium-high heat for 6 to 8 minutes per side, or until well done.

Serve on toasted buns with Coconut-Mint Mayonnaise.

I assume that you like the tase of these burgers? You never actually say. I will have to try it. I have my own turkey burger concotion that everyone who has tried them loves... I will give this one a shot. Thanks

Oh, these burgers are great! I had them two nights in a row.

I am usually disappointed by turkey burgers because they usually come out too dry. But these have tons of flavor. Michelle thought they were a little too spicy but I thought they were perfect. Post your concoction here and I'll compare...

I made these once during my family vacation for 24 people and everyone agreed my dinner (everyone had to make dinner one night) was by far the most exciting and delicious. We made the mint mayo from scratch instead of buying bhome bought. They were a hit. Only problem was that they fell apart a little while cooking them. Still... they were awesome!
